Maybe it's better for larger tanks, but I use stargrass to make a carpet. It will crawl along the substrate with enough lighting, even in my deep tanks. I think it could also work in your 5g. The plants would not die off, however, they would not throw off a root system so that they could carpet. On the other hand, I have three planted aquaria with dh and ms where these plants have fully carpeted.

The were a few browning blades at first, but the grass has since been healthier (still some browning, but not horrible). Only used peat moss capped with fluorite black sand as the substrate. Dry starting mineralized the peat and gave the grass a chance to become fully established into the substrate.
